Cornish Game Hen are such a fun dish. This light tasting fowl is accentuated by the Citrus Ginger Marinade as well as given the standard BBQ Rub Treatment with two different types of sauce. The best part of this method is that the birds are spatchcocked and cook perfectly evenly.
Ingredients
- 4 Cornish Game Hens
- Citrus Ginger Marinade
Directions
Step 1: To Spatchcock the Cornish Game Hen, cut the backbone out of the bird. Flip it over and push the hen flat. You can hear and feel the breastbone crack. Tuck the wingtips under the neck area.
Step 2: Place the hens into a non-reactive baking dish and pour the marinade into each non-reactive bowl, cover and refrigerate for 8 to 10 hours.
Step 3: For the other two hens, I rubbed both sides with University of Que The Quad All Purpose BBQ Rub and placed them in a baking dish. Cover and refrigerate for 8 to 10 hours.
Step 5: Preheat your Grill to about 375 degrees.
Step 6: Place the Cornish Game Hens on the Grill with the cavity facing down. Cook for an hour and 15 minutes (or until a thermometer inserted into the thickest area of the thigh registers 165 degrees), basting the Orange Ginger marinated hens every 20 minutes (be sure to boil leftover marinade for 5 minutes before basting the hens).
Step 7: Serve marinated hens as is. For sauced hens, glaze with University of Que G.P.A. Sauce for the last five minutes and serve.
